Vegan Tofu Quiche


Ingredients (yields : one 20 cm quiche)
300 g silken tofu
1 tsp soy sayce
2 tsp Dijon mustard
1 tbsp olive oil
1½ tbsp nutritional yeast
½ tsp salt
¼ tsp black pepper
2 tbsp cornstarch
150 g sautéed mushrooms
1 tbsp chopped fresh chives
1 oil-based 20 cm pie crust, pre-baked
Realisation
Blend the tofu, soy sauce, mustard, olive oil, nutritional yeast, salt, black pepper and cornstarch until smooth ;
Fold in the sautéed mushrooms and chives ;
Pour the mixture into the pre-baked pie crust;
Bake in a 180°C oven for 30 minutes, or until the top is firm ;
Let cool for 10 minutes before slicing ;
Serve and enjoy!
