Vegan Tofu Quiche

Ingredients (yields : one 20 cm quiche)
  • 300 g silken tofu

  • 1 tsp soy sayce

  • 2 tsp Dijon mustard

  • 1 tbsp olive oil

  • 1½ tbsp nutritional yeast

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp cornstarch

  • 150 g sautéed mushrooms

  • 1 tbsp chopped fresh chives

  • 1 oil-based 20 cm pie crust, pre-baked

Realisation
  1. Blend the tofu, soy sauce, mustard, olive oil, nutritional yeast, salt, black pepper and cornstarch until smooth ;

  2. Fold in the sautéed mushrooms and chives ;

  3. Pour the mixture into the pre-baked pie crust;

  4. Bake in a 180°C oven for 30 minutes, or until the top is firm ;

  5. Let cool for 10 minutes before slicing ;

  6. Serve and enjoy!
