Description

Soy pulp is a by-product of soy milk production. It is the fibrous residue that remains after soybeans are ground and pressed to extract the soy milk. It is known in Chinese as dòuzhā or dòufuzhā and in Japanese as okara. It contains significant amounts of fiber, protein, and carbohydrates, making it a nutritious ingredient. While traditionally discarded or used as animal feed, soy pulp is increasingly being utilized as a valuable food product. It can be incorporated into stir-fried dishes, used to make veggie patties, or employed as a wheat flour substitute in baked goods.
