Description
Silken tofu has the most tender texture among tofu varieties. The essential difference between silken tofu and other types of tofu lies in the final two stages of the production process—coagulation and moulding. When making silken tofu, these two stages are combined into one, where the soy milk directly solidifies into the finished product in the serving vessel. In this context, silken tofu is soy pudding in nature.
