Tofu Velouté

Ingredients (yields : 2 servings)
  • 2 tbsp olive oil

  • 100 g leek, white part only

  • 100 g firm tofu, diced

  • 1 tbsp hoisin sauce

  • 1 tsp soy sauce

  • 500 ml vegetable broth

  • 2 tsp chervil leaves

Realisation
  1. In a heavy-bottomed saucepan, sauté the leek in olive oil until softened;

  2. Add the tofu, hoisin sauce, soy sauce and vegetable broth;

  3. Bring to a boil, then reduce the heat and simmer for 20 minutes;

  4. Blend everything in a mixer until smooth;

  5. Taste and add more salt if needed;

  6. Serve topped with chervil and enjoy!
