Tofu Velouté


Ingredients (yields : 2 servings)
2 tbsp olive oil
100 g leek, white part only
100 g firm tofu, diced
1 tbsp hoisin sauce
1 tsp soy sauce
500 ml vegetable broth
2 tsp chervil leaves
Realisation
In a heavy-bottomed saucepan, sauté the leek in olive oil until softened;
Add the tofu, hoisin sauce, soy sauce and vegetable broth;
Bring to a boil, then reduce the heat and simmer for 20 minutes;
Blend everything in a mixer until smooth;
Taste and add more salt if needed;
Serve topped with chervil and enjoy!
