Firm Tofu
Also Called
northern tofu, brine tofu, plank tofu
Usage
used as an ingredient for cooking, especially in baking, stir-frying, pan-frying, deep-frying, braising, double-boiling, steaming, and poaching methods
Description
Compared to semi-firm tofu, firm tofu has lower water content, greater hardness, stronger resilience, and is less prone to breakage, but its texture is relatively rough. This is because, in the final moulding stage of tofu production, more water is pressed out based on the semi-firm tofu, resulting in firm tofu.
