Tofu Terrine


Ingredients (yields : 1 terrine, 25x8x6 cm)
1 zucchini
400 g firm tofu
250 g cooked beans
1 onion, finely chopped
3 cloves of garlic, minced
¼ cup chopped fresh parsley
1 tsp smoked paprika
1 tsp dried herbes de Provence
¼ tsp ground white pepper
¼ tsp ground black pepper
1 tsp salt
2 tbsp soy sauce
2 tbsp hoisin sauce
1 cup fresh breadcrumbs
1 egg
Realisation
Thinly slice the zucchini and use it to line the terrine mold;
Coarsely mash the tofu and beans together until combined;
Add the onion, garlic, parsley, paprika, dried herbes de Provence, ground white pepper, ground black pepper, salt, soy sauce and hoisin sauce, then mix well;
Add the breadcrumbs and egg, then mix until well combined;
Pack the mixture tightly into the prepared mold;
Cover the mold and bake in a water bath at 180°C for 50 minutes;
Allow the terrine to cool fully in the mold, then refrigerate it overnight in the mold to set;
Serve and enjoy !
