Tofu Terrine

Ingredients (yields : 1 terrine, 25x8x6 cm)
  • 1 zucchini

  • 400 g firm tofu

  • 250 g cooked beans

  • 1 onion, finely chopped

  • 3 cloves of garlic, minced

  • ¼ cup chopped fresh parsley

  • 1 tsp smoked paprika

  • 1 tsp dried herbes de Provence

  • ¼ tsp ground white pepper

  • ¼ tsp ground black pepper

  • 1 tsp salt

  • 2 tbsp soy sauce

  • 2 tbsp hoisin sauce

  • 1 cup fresh breadcrumbs

  • 1 egg

Realisation
  1. Thinly slice the zucchini and use it to line the terrine mold;

  2. Coarsely mash the tofu and beans together until combined;

  3. Add the onion, garlic, parsley, paprika, dried herbes de Provence, ground white pepper, ground black pepper, salt, soy sauce and hoisin sauce, then mix well;

  4. Add the breadcrumbs and egg, then mix until well combined;

  5. Pack the mixture tightly into the prepared mold;

  6. Cover the mold and bake in a water bath at 180°C for 50 minutes;

  7. Allow the terrine to cool fully in the mold, then refrigerate it overnight in the mold to set;

  8. Serve and enjoy !
