Tofu Tempura


Ingredients (yields : 30 pieces)
250 ml ice-cold water
1 egg
120 g rice flour + more for dusting
A pinch of salt
Frying oil of your choice
300 g silken tofu
Realisation
Chill all ingredients and the mixing bowls;
In a bowl, whisk the egg with the ice-cold water;
In another bowl, sift together the rice flour and salt;
Gradually add the flour mixture to the egg-water mixture and mix until just combined;
Heat the frying oil in a deep pot to 180 °C;
Use a melon scoop to shape the tofu into bite-sized portions;
Lightly dust the tofu with rice flour, then dip it into the batter, shaking off the excess;
Fry until lightly golden and crispy;
Remove with a slotted spoon and drain on paper towels;
Serve with your desired sauce and enjoy!
