Tofu Tempura

Ingredients (yields : 30 pieces)
  • 250 ml ice-cold water

  • 1 egg

  • 120 g rice flour + more for dusting

  • A pinch of salt

  • Frying oil of your choice

  • 300 g silken tofu

Realisation
  1. Chill all ingredients and the mixing bowls;

  2. In a bowl, whisk the egg with the ice-cold water;

  3. In another bowl, sift together the rice flour and salt;

  4. Gradually add the flour mixture to the egg-water mixture and mix until just combined;

  5. Heat the frying oil in a deep pot to 180 °C;

  6. Use a melon scoop to shape the tofu into bite-sized portions;

  7. Lightly dust the tofu with rice flour, then dip it into the batter, shaking off the excess;

  8. Fry until lightly golden and crispy;

  9. Remove with a slotted spoon and drain on paper towels;

  10. Serve with your desired sauce and enjoy!
