Tofu Stoverij

Ingredients (yields : 4 servings)
  • ¼ cup butter

  • 400 g onion, sliced

  • 500 ml dark Belgian beer

  • 1 tbsp brown sugar

  • 1 tbsp apple cider vinegar

  • ½ tsp dried thyme

  • 2 bay leaves

  • 2 tsp salt

  • 1 tsp black pepper

  • 400 g firm tofu, cubed,

  • 2 tbsp mustard

  • 2 slices of bread

Realisation
  1. Melt the butter in a Dutch oven;

  2. Sauté the onions until caramelized;

  3. Add the beer, brown sugar, vinegar, thyme, bay leaves, salt and black pepper, then stir until combined;

  4. Add the tofu;

  5. Spread the mustard on the bread slices;

  6. Place the slices, mustard side down, on top of the mixture;

  7. Bring the mixture to a simmer;

  8. Cover and cook on low heat for about 1.5 hours, stirring occasionally, until the tofu takes on a deep brown hue;

  9. Adjust seasoning if needed;

  10. Serve and enjoy!
