Tofu Stoverij


Ingredients (yields : 4 servings)
¼ cup butter
400 g onion, sliced
500 ml dark Belgian beer
1 tbsp brown sugar
1 tbsp apple cider vinegar
½ tsp dried thyme
2 bay leaves
2 tsp salt
1 tsp black pepper
400 g firm tofu, cubed,
2 tbsp mustard
2 slices of bread
Realisation
Melt the butter in a Dutch oven;
Sauté the onions until caramelized;
Add the beer, brown sugar, vinegar, thyme, bay leaves, salt and black pepper, then stir until combined;
Add the tofu;
Spread the mustard on the bread slices;
Place the slices, mustard side down, on top of the mixture;
Bring the mixture to a simmer;
Cover and cook on low heat for about 1.5 hours, stirring occasionally, until the tofu takes on a deep brown hue;
Adjust seasoning if needed;
Serve and enjoy!
