Tofu Stoemp


Ingredients (yields : 2 servings)
200 g carrots, peeled and sliced
100 g leek, cleaned and sliced
500 ml vegetable broth
200 g firm tofu, finely grated
1 tbsp hoisin sauce
1 tbsp soy sauce
30 g butter
⅛ tsp salt, or to taste
⅛ tsp ground black pepper, or to taste
A pinch of ground nutmeg
Realisation
Simmer the carrots and leek in the broth for 20 minutes, until soft;
Drain the carrots and leek and set aside;
Season the grated tofu with hoisin sauce and soy sauce, and mix until evenly coated;
Sauté the tofu in butter for 2–3 minutes;
Add the sautéed tofu to the cooked carrots and leek, then mash to combine;
Taste and season with salt, black pepper, and nutmeg;
Serve and enjoy!
