Tofu Stoemp

Ingredients (yields : 2 servings)
  • 200 g carrots, peeled and sliced

  • 100 g leek, cleaned and sliced

  • 500 ml vegetable broth

  • 200 g firm tofu, finely grated

  • 1 tbsp hoisin sauce

  • 1 tbsp soy sauce

  • 30 g butter

  • ⅛ tsp salt, or to taste

  • ⅛ tsp ground black pepper, or to taste

  • A pinch of ground nutmeg

Realisation
  1. Simmer the carrots and leek in the broth for 20 minutes, until soft;

  2. Drain the carrots and leek and set aside;

  3. Season the grated tofu with hoisin sauce and soy sauce, and mix until evenly coated;

  4. Sauté the tofu in butter for 2–3 minutes;

  5. Add the sautéed tofu to the cooked carrots and leek, then mash to combine;

  6. Taste and season with salt, black pepper, and nutmeg;

  7. Serve and enjoy!
