Tofu Monte Cristo Sandwich

Ingredients (yields : 1 serving)
  • 1 slice of firm tofu, 3mm thick

  • 1/4 cup pesto sauce

  • 1 egg

  • 1/4 cup milk

  • pinch of salt

  • 2 slices of bread

  • 1 tbsp olive oil

  • 1 slice of Gouda cheese

  • 1 slice of fresh mozzarella

Realisation
  1. Marinate the tofu in the pesto sauce for one hour;

  2. Mix the egg, milk, and a pinch of salt until well combined;

  3. Dip the bread slices into the batter and let them sit to soak it up;

  4. Heat the olive oil in a skillet, and brown one side of each bread slice;

  5. Transfer one slice of bread to a baking sheet, browned side down;

  6. Place the slice of Gouda cheese on top of the bread;

  7. Place the marinated tofu slice on top of the cheese;

  8. Place the slice of fresh mozzarella on top of the tofu;

  9. Brush with the pesto sauce;

  10. Place the other slice of bread on top, browned side up;

  11. Transfer the baking sheet to the oven and bake at 180ºC for 10-15 minutes, or until the batter is set and the cheese has melted;

  12. Serve and enjoy!
