Tofu Monte Cristo Sandwich
Ingredients (yields : 1 serving)
1 slice of firm tofu, 3mm thick
1/4 cup pesto sauce
1 egg
1/4 cup milk
pinch of salt
2 slices of bread
1 tbsp olive oil
1 slice of Gouda cheese
1 slice of fresh mozzarella
Realisation
Marinate the tofu in the pesto sauce for one hour;
Mix the egg, milk, and a pinch of salt until well combined;
Dip the bread slices into the batter and let them sit to soak it up;
Heat the olive oil in a skillet, and brown one side of each bread slice;
Transfer one slice of bread to a baking sheet, browned side down;
Place the slice of Gouda cheese on top of the bread;
Place the marinated tofu slice on top of the cheese;
Place the slice of fresh mozzarella on top of the tofu;
Brush with the pesto sauce;
Place the other slice of bread on top, browned side up;
Transfer the baking sheet to the oven and bake at 180ºC for 10-15 minutes, or until the batter is set and the cheese has melted;
Serve and enjoy!
