Tofu Faux Gras

Ingredients (yields: 18 servings)
  • 250 g silken tofu

  • 12 g miso

  • 10 g nutritional yeast

  • 50 g cooked chestnuts

  • 2 tsp agar-agar

  • 250 ml sweet white wine

  • 1 tbsp olive oil

  • 50 g onion, peeled and minced

  • ¼ tsp salt

  • ⅛ tsp ground black pepper

  • 1 tsp four-spice blend

Realisation
  1. Mix the tofu, miso, nutritional yeast, and chestnuts in a blender until smooth, then set aside;

  2. Add the agar-agar to the wine and stir to combine;

  3. Sauté the onion in the olive oil until softened;

  4. Add the salt, pepper, and four-spice blend, then stir to combine;

  5. Add the wine–agar mixture and simmer for 2 minutes;

  6. Turn off the heat, then add the tofu–chestnut mixture and stir until fully incorporated;

  7. Transfer the mixture to the mold;

  8. Chill in the refrigerator for 3 hours to set;

  9. Serve and enjoy!
