Tofu Cantaloupe Mousse
Ingredients (yields : 10 servings)
10 g gelatin
50 ml water
600 g silken tofu
300 g peeled, deseeded and cubed cantaloupe
4 tbsp white sugar
1 tsp vanilla extract
Realisation
Immerse the gelatin in the water for 5 minutes;
In a mixer, blend the silken tofu, cantaloupe, sugar and vanilla extract together until smooth;
Heat the gelatin mixture until it fully dissolved and reaches 60ºC;
Add the gelatin mixture to the cantaloupe mixture and blend thoroughly to ensure even distribution ;
Divide the mousse into serving glasses ;
Chill in the refrigerator for 4 hours ;
Serve and enjoy !
