Tofu Cantaloupe Mousse

Ingredients (yields : 10 servings)
  • 10 g gelatin

  • 50 ml water

  • 600 g silken tofu

  • 300 g peeled, deseeded and cubed cantaloupe

  • 4 tbsp white sugar

  • 1 tsp vanilla extract

Realisation
  1. Immerse the gelatin in the water for 5 minutes;

  2. In a mixer, blend the silken tofu, cantaloupe, sugar and vanilla extract together until smooth;

  3. Heat the gelatin mixture until it fully dissolved and reaches 60ºC;

  4. Add the gelatin mixture to the cantaloupe mixture and blend thoroughly to ensure even distribution ;

  5. Divide the mousse into serving glasses ;

  6. Chill in the refrigerator for 4 hours ;

  7. Serve and enjoy !
