Silken Tofu Mushroom Velouté

Ingredients (yields : 10 servings)
  • 1 kg mushrooms

  • 1 onion

  • 3 cloves of garlic

  • 60 g butter

  • 1000 ml vegetable broth

  • 1 bouquet garni

  • 600 g silken tofu

  • salt and pepper

Realisation
  1. Slice the mushrooms;

  2. Slice the onion;

  3. Mince the garlic;

  4. Melt the butter in a large saucepan, add the sliced mushrooms, and stir-fry until golden brown, about 15 minutes;

  5. Add sliced onion and cook until softened, about 8 minutes;

  6. Add the minced garlic and stir-fry until fragrant, about 1 minute;

  7. Add the vegetable broth and bouquet garni, bring to a boil, then simmer for 1 hour;

  8. Off the heat, remove the bouquet garni, add the silken tofu, and blend together with an immersion blender until smooth and creamy;

  9. Taste and season with salt and pepper according to your preference;

  10. Bring the creamy mixture back to a boil;

  11. Serve and enjoy!
