Silken Tofu Mushroom Velouté
Ingredients (yields : 10 servings)
1 kg mushrooms
1 onion
3 cloves of garlic
60 g butter
1000 ml vegetable broth
1 bouquet garni
600 g silken tofu
salt and pepper
Realisation
Slice the mushrooms;
Slice the onion;
Mince the garlic;
Melt the butter in a large saucepan, add the sliced mushrooms, and stir-fry until golden brown, about 15 minutes;
Add sliced onion and cook until softened, about 8 minutes;
Add the minced garlic and stir-fry until fragrant, about 1 minute;
Add the vegetable broth and bouquet garni, bring to a boil, then simmer for 1 hour;
Off the heat, remove the bouquet garni, add the silken tofu, and blend together with an immersion blender until smooth and creamy;
Taste and season with salt and pepper according to your preference;
Bring the creamy mixture back to a boil;
Serve and enjoy!
