Silken Tofu Frangipane Tart

Ingredients (yields : 8 servings)
  • 2 cups crumble crust

  • 300 g silken tofu

  • 120 g granulated sugar

  • A few drops of almond extract

  • 150 g almond flour

  • 2 tbsp cornstarch

  • A pinch of salt

Realisation
  1. Line a 10-inch pie pan with parchment paper and press the crumble crust into the bottom;

  2. Blend the tofu, sugar and almond extract together in a food processor until smooth and creamy;

  3. In a separate bowl, combine the almond flour and salt, and mix well;

  4. Add the tofu mixture to the almond flour mixture and mix with a spatula until combined;

  5. Pour the mixture onto the crust;

  6. Bake in a 180ºC oven for 25 minutes or until golden brown;

  7. Take the tart out of thte oven and let it cool until warm to the touch, then remove from the baking pan and slice;

  8. Serve and enjoy!
