Silken Tofu Brownie

Ingredients (yields: 9 servings)
  • 300 g silken tofu

  • 120 g melted coconut oil

  • 300 g caster sugar

  • ½ tsp salt

  • 1½ tsp vanilla extract

  • 100 g cocoa powder

  • 100 g almond flour

  • 50 g cornstarch

Realisation
  1. Line a 20 x 20 cm baking pan with parchment paper;

  2. Blend the silken tofu, coconut oil, sugar, salt, and vanilla extract until smooth;

  3. Sift together the cocoa powder, almond flour, and cornstarch through a medium-mesh strainer;

  4. Mix the wet and dry ingredients until just combined;

  5. Transfer the batter into the prepared baking pan;

  6. Bake in a 180ºC oven for about 30 minutes, or until the top is set and a toothpick inserted near the center comes out almost clean;

  7. Let cool in the pan for 15 minutes, then transfer to a rack to cool completely before cutting;

  8. Serve and enjoy!
