Silken Tofu Brownie


Ingredients (yields: 9 servings)
300 g silken tofu
120 g melted coconut oil
300 g caster sugar
½ tsp salt
1½ tsp vanilla extract
100 g cocoa powder
100 g almond flour
50 g cornstarch
Realisation
Line a 20 x 20 cm baking pan with parchment paper;
Blend the silken tofu, coconut oil, sugar, salt, and vanilla extract until smooth;
Sift together the cocoa powder, almond flour, and cornstarch through a medium-mesh strainer;
Mix the wet and dry ingredients until just combined;
Transfer the batter into the prepared baking pan;
Bake in a 180ºC oven for about 30 minutes, or until the top is set and a toothpick inserted near the center comes out almost clean;
Let cool in the pan for 15 minutes, then transfer to a rack to cool completely before cutting;
Serve and enjoy!
