Matcha Tofu Mousse

Ingredients (yields: 4 servings)
  • ½ tsp agar-agar

  • ½ cup water

  • 2 tsp matcha powder

  • 300 g silken tofu, at room temperature

  • 60 g simple syrup

  • A pinch of salt

Realisation
  1. Mix the agar-agar with the water until completely dissolved;

  2. Bring to a boil and continue to cook for 2 minutes;

  3. Whisk in the matcha powder until dissolved;

  4. In a blender, blend the silken tofu, matcha-agar mixture, syrup, and salt until completely smooth;

  5. Divide the mixture into serving glasses; Refrigerate for at least 3 hours or until set;

  6. Serve and bon appétit!
