Matcha Tofu Mousse


Ingredients (yields: 4 servings)
½ tsp agar-agar
½ cup water
2 tsp matcha powder
300 g silken tofu, at room temperature
60 g simple syrup
A pinch of salt
Realisation
Mix the agar-agar with the water until completely dissolved;
Bring to a boil and continue to cook for 2 minutes;
Whisk in the matcha powder until dissolved;
In a blender, blend the silken tofu, matcha-agar mixture, syrup, and salt until completely smooth;
Divide the mixture into serving glasses; Refrigerate for at least 3 hours or until set;
