Homemade Tofu


Ingredients (yields : 60 g)
500 ml homemade soy milk
1½ tbsp lemon juice
Realisation
Heat the soy milk over medium heat to 80°C, stirring constantly to prevent scorching;
Remove from the heat and stir in the lemon juice, one teaspoon at a time, waiting 1 minute between each addition;
Let the mixture sit undisturbed for 10 minutes;
Line a fine strainer with cheesecloth and place it over a bowl;
Pour the curdled soy milk into the cheesecloth-lined strainer and let it drain thoroughly;
Gather the cheesecloth and gently press out the excess liquid;
Press the curds inside the cheesecloth into a mold to shape as desired—this is your tofu;
Cook it the way you like and enjoy!
