Homemade Tofu

Ingredients (yields : 60 g)

  1. Heat the soy milk over medium heat to 80°C, stirring constantly to prevent scorching;

  2. Remove from the heat and stir in the lemon juice, one teaspoon at a time, waiting 1 minute between each addition;

  3. Let the mixture sit undisturbed for 10 minutes;

  4. Line a fine strainer with cheesecloth and place it over a bowl;

  5. Pour the curdled soy milk into the cheesecloth-lined strainer and let it drain thoroughly;

  6. Gather the cheesecloth and gently press out the excess liquid;

  7. Press the curds inside the cheesecloth into a mold to shape as desired—this is your tofu;

  8. Cook it the way you like and enjoy!
