Tofu Scarpariello
Ingredients (yields : 2 servings)
400 g firm tofu
4 mushrooms
1 onion
5 cloves of garlic
A bunch of parsley
1/4 cup olive oil
1 tsp dried rosemary
1 tsp dried oregano
1 tsp paprika
1/2 cup dry white wine
1/4 cup red wine vinegar
250 ml broth
Salt and pepper
Realisation
Slice the tofu into thin strips;
Slice the mushrooms;
Peel and slice the onion;
Peel and mince the garlic;
Chop the parsley finely;
Heat the oil in the skillet, then sear the tofu and set it aside;
In the same skillet, add the onion and cook until caramelised, about 10 minutes;
Add the garlic, dried rosemay, dried oregano and paprika, then cook for 1 minute;
Add the wine and cook until it evaporates;
Add the vinegar, broth, tofu, and mushrooms, then bring to a boil;
Reduce the heat and simmer with the lid on for 20 minutes;
Taste and season with salt and pepper to your preference;
Increase the heat and cook without the lid until the sauce reduces to the desired consistency;
Add the chopped parsley;
Serve and enjoy!
