Tofu Scarpariello

Ingredients (yields : 2 servings)
  • 400 g firm tofu

  • 4 mushrooms

  • 1 onion

  • 5 cloves of garlic

  • A bunch of parsley

  • 1/4 cup olive oil

  • 1 tsp dried rosemary

  • 1 tsp dried oregano

  • 1 tsp paprika

  • 1/2 cup dry white wine

  • 1/4 cup red wine vinegar

  • 250 ml broth

  • Salt and pepper

Realisation
  1. Slice the tofu into thin strips;

  2. Slice the mushrooms;

  3. Peel and slice the onion;

  4. Peel and mince the garlic;

  5. Chop the parsley finely;

  6. Heat the oil in the skillet, then sear the tofu and set it aside;

  7. In the same skillet, add the onion and cook until caramelised, about 10 minutes;

  8. Add the garlic, dried rosemay, dried oregano and paprika, then cook for 1 minute;

  9. Add the wine and cook until it evaporates;

  10. Add the vinegar, broth, tofu, and mushrooms, then bring to a boil;

  11. Reduce the heat and simmer with the lid on for 20 minutes;

  12. Taste and season with salt and pepper to your preference;

  13. Increase the heat and cook without the lid until the sauce reduces to the desired consistency;

  14. Add the chopped parsley;

  15. Serve and enjoy!
