Tofu Frittata

Ingredients yields : 8 servings)
  • 150 g mushrooms

  • 150 g carrots

  • 150 g bell peppers

  • 1 onion

  • 2 cloves garlic

  • 100 ml olive oil

  • 400 g firm tofu

  • 2 tbsp soy sauce

  • 1 tbsp balsamic vinegar

  • 1.5 tsp salt

  • 1 tsp ground black pepper

  • 1 tsp turmeric

  • 1/2 tsp smoked paprika

  • 4 sprigs of chives

  • 60 g all-purpose flour

  • 100 ml soy milk

Realisation
  1. Finely chop the mushrooms, carrots, bell peppers, onion and chives;

  2. Mince the garlic;

  3. Heat the olive oil in a skillet;

  4. Add the chopped onion and cook until translucent;

  5. Add the minced garlic and cook until fragrant;

  6. Add the chopped mushrooms, carrots, and bell peppers, and sauté until tender;

  7. Set the sautéed vegetables aside;

  8. Grate the tofu into a large mixing bowl;

  9. Add the sautéed vegetables, soy sauce, balsamic vinegar, salt, black pepper, turmeric, smoked paprika, and chives;

  10. Add the flour and mix until well combined;

  11. Add the soy milk and mix until a cohesive batter is formed;

  12. Transfer the batter into a 30 cm diameter baking pan;

  13. Bake at 180ºC for 15 mins or until golden brown;

  14. Remove it from the oven and let it cool for 15 minutes before slicing;

  15. Serve and enjoy!
