Tofu Frittata


Ingredients (yields : 8 servings)
150 g mushrooms
150 g carrots
150 g bell peppers
1 onion
2 cloves garlic
100 ml olive oil
400 g firm tofu
2 tbsp soy sauce
1 tbsp balsamic vinegar
1.5 tsp salt
1 tsp ground black pepper
1 tsp turmeric
1/2 tsp smoked paprika
4 sprigs of chives
60 g all-purpose flour
100 ml soy milk
Realisation
Finely chop the mushrooms, carrots, bell peppers, onion and chives;
Mince the garlic;
Heat the olive oil in a skillet;
Add the chopped onion and cook until translucent;
Add the minced garlic and cook until fragrant;
Add the chopped mushrooms, carrots, and bell peppers, and sauté until tender;
Set the sautéed vegetables aside;
Grate the tofu into a large mixing bowl;
Add the sautéed vegetables, soy sauce, balsamic vinegar, salt, black pepper, turmeric, smoked paprika, and chives;
Add the flour and mix until well combined;
Add the soy milk and mix until a cohesive batter is formed;
Transfer the batter into a 30 cm diameter baking pan;
Bake at 180ºC for 15 mins or until golden brown;
Remove it from the oven and let it cool for 15 minutes before slicing;
Serve and enjoy!
