Tofu ai Peperoni

Ingredients (yields : 4 servings)
  • 400 g smoked tofu

  • 1 onion

  • 3 cloves of garlic

  • 2 tomatoes

  • 4 mushrooms

  • 4 sundried tomatoes

  • 1 yellow bell pepper

  • 1 red bell pepper

  • 3 tbsp olive oil

  • 2 tsp paprika

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1/4 cup grated Pecorino Romano

Realisation
  1. Slice the tofu;

  2. Peel and slice the onion;

  3. Peel and mince the garlic;

  4. Slice the tomatoes;

  5. Slice the mushrooms;

  6. Dice the sun-dried tomatoes;

  7. Slice the bell peppers;

  8. Heat the oil in the skillet, add the onion, and cook until translucent, about 5 minutes;

  9. Add the garlic and cook for 1 minute;

  10. Add the paprika, dried oregano, and dried basil, then cook for 1 minute;

  11. Add the sliced tomatoes and cook until reduced into a sauce;

  12. Add the sun-dried tomatoes and mushrooms and cook for 3 minutes;

  13. Reduce the heat, add the tofu and bell peppers, and cook for 5 minutes while stirring gently occasionally;

  14. Serve with the grated cheese and enjoy!
