Tofu ai Peperoni
Ingredients (yields : 4 servings)
400 g smoked tofu
1 onion
3 cloves of garlic
2 tomatoes
4 mushrooms
4 sundried tomatoes
1 yellow bell pepper
1 red bell pepper
3 tbsp olive oil
2 tsp paprika
1 tsp dried oregano
1 tsp dried basil
1/4 cup grated Pecorino Romano
Realisation
Slice the tofu;
Peel and slice the onion;
Peel and mince the garlic;
Slice the tomatoes;
Slice the mushrooms;
Dice the sun-dried tomatoes;
Slice the bell peppers;
Heat the oil in the skillet, add the onion, and cook until translucent, about 5 minutes;
Add the garlic and cook for 1 minute;
Add the paprika, dried oregano, and dried basil, then cook for 1 minute;
Add the sliced tomatoes and cook until reduced into a sauce;
Add the sun-dried tomatoes and mushrooms and cook for 3 minutes;
Reduce the heat, add the tofu and bell peppers, and cook for 5 minutes while stirring gently occasionally;
Serve with the grated cheese and enjoy!
