Tofu Adobo
Ingredients (yields : 2 servings)
250 g firm tofu
1/3 cup rice vinegar
2 tbsp soy sauce
1 tbsp sambal sauce
1 onion
10 cloves of garlic
1 small green bell pepper
1 small yellow bell pepper
1 small red bell pepper
2 tbsp olive oil
1 cup vegetable broth
3 bay leaves
Salt and pepper
Realisation
Slice the tofu into 5 mm thick pieces;
Mix the rice vinegar, soy sauce, and sambal sauce together, and marinate the tofu overnight;
Peel and slice the onion;
Peel and mince the garlic;
Slice the bell peppers;
Heat the olive oil in a skillet and sear the marinated tofu on both sides;
Remove the tofu from the skillet and set aside;
In the same skillet, cook the onion until translucent, about 8 minutes;
Add the minced garlic and cook until fragrant;
Transfer the tofu back into the skillet and add the marinade, broth, bay leaves and peppers;
Bring to a boil, then braise for 20 minutes;
Taste and adjust the salt and pepper;
Serve and enjoy!
