Tofu Adobo

Ingredients (yields : 2 servings)
  • 250 g firm tofu

  • 1/3 cup rice vinegar

  • 2 tbsp soy sauce

  • 1 tbsp sambal sauce

  • 1 onion

  • 10 cloves of garlic

  • 1 small green bell pepper

  • 1 small yellow bell pepper

  • 1 small red bell pepper

  • 2 tbsp olive oil

  • 1 cup vegetable broth

  • 3 bay leaves

  • Salt and pepper

Realisation
  1. Slice the tofu into 5 mm thick pieces;

  2. Mix the rice vinegar, soy sauce, and sambal sauce together, and marinate the tofu overnight;

  3. Peel and slice the onion;

  4. Peel and mince the garlic;

  5. Slice the bell peppers;

  6. Heat the olive oil in a skillet and sear the marinated tofu on both sides;

  7. Remove the tofu from the skillet and set aside;

  8. In the same skillet, cook the onion until translucent, about 8 minutes;

  9. Add the minced garlic and cook until fragrant;

  10. Transfer the tofu back into the skillet and add the marinade, broth, bay leaves and peppers;

  11. Bring to a boil, then braise for 20 minutes;

  12. Taste and adjust the salt and pepper;

  13. Serve and enjoy!
