Stir-fried Soy Snowflakes


Ingredients (yields : 2 servings)
50 g carrot
50 g bok choy
50 g mushrooms
3 tbsp vegetable oil
100 g soy pulp
½ tsp salt
½ tsp mustard powder
2 tsp soy sauce
Realisation
Peel and dice the carrots;
Dice the stems of the bok choy and slice the leaves;
Dice the mushrooms;
Add 2 tbsp vegetable oil to a saucepan and cook the soy pulp until light and fluffy;
Remove the soy pulp from the pan;
Add 1 tbsp vegetable oil to the same pan;
Add the carrots, bok choy, and mushrooms, then sauté until softened;
Return the sautéed soy pulp to the pan;
Add the salt, mustard powder, and soy sauce, then stir until combined;
Serve and enjoy!
