Stir-fried Soy Snowflakes

Ingredients (yields : 2 servings)
  • 50 g carrot

  • 50 g bok choy

  • 50 g mushrooms

  • 3 tbsp vegetable oil

  • 100 g soy pulp

  • ½ tsp salt

  • ½ tsp mustard powder

  • 2 tsp soy sauce

Realisation
  1. Peel and dice the carrots;

  2. Dice the stems of the bok choy and slice the leaves;

  3. Dice the mushrooms;

  4. Add 2 tbsp vegetable oil to a saucepan and cook the soy pulp until light and fluffy;

  5. Remove the soy pulp from the pan;

  6. Add 1 tbsp vegetable oil to the same pan;

  7. Add the carrots, bok choy, and mushrooms, then sauté until softened;

  8. Return the sautéed soy pulp to the pan;

  9. Add the salt, mustard powder, and soy sauce, then stir until combined;

  10. Serve and enjoy!
