Soybean Burger Patty


Realisation
Soak the soybeans in water for 12 hours;
Drain and rinse well;
Place the soaked soybeans in a large pot of water, bring to a boil, then simmer for 3 hours until tender;
Drain well;
Mash the cooked soybeans with the tahini using a potato masher;
Add the onion, garlic, carrot, soy sauce, Pimentón de la Vera, cumin, salt, and pepper;
Mix until a sticky mixture forms;
Divide the mixture into 6 portions and shape each into a burger patty about 2 cm thick;
Brush a parchment-lined baking tray with oil;
Place the patties on the tray;
Brush the tops of the patties with more oil;
Bake in a 200ºC oven for 25~30 minutes, or until golden;
Serve with your desired sauce and enjoy!
