Soybean Burger Patty

Ingredients (yields: 6 servings)
  • 200 g dry soybeans

  • 2 tbsp tahini

  • 100 g onion, finely chopped

  • 3 cloves garlic, minced

  • 100 g carrot, grated

  • 2 tbsp soy sauce

  • 1 tsp Pimentón de la Vera

  • 1 tsp ground cumin

  • ½ tsp salt

  • ¼ tsp ground black pepper

  • 2 tbsp olive oil

Realisation
  1. Soak the soybeans in water for 12 hours;

  2. Drain and rinse well;

  3. Place the soaked soybeans in a large pot of water, bring to a boil, then simmer for 3 hours until tender;

  4. Drain well;

  5. Mash the cooked soybeans with the tahini using a potato masher;

  6. Add the onion, garlic, carrot, soy sauce, Pimentón de la Vera, cumin, salt, and pepper;

  7. Mix until a sticky mixture forms;

  8. Divide the mixture into 6 portions and shape each into a burger patty about 2 cm thick;

  9. Brush a parchment-lined baking tray with oil;

  10. Place the patties on the tray;

  11. Brush the tops of the patties with more oil;

  12. Bake in a 200ºC oven for 25~30 minutes, or until golden;

  13. Serve with your desired sauce and enjoy!
