Soy Tzatziki

Ingredients ( yields : 250 ml )
  • 120 g cucumber, peeled and grated

  • ¼ tsp (for draining cucumber)

  • 120 g soy yogurt

  • 1 clove of garlic, minced

  • 1 tbsp olive oil

  • 1 tsp dried dill

  • Zest of 1 lemon

  • ½ tsp salt (for seasoning)

  • ¼ tsp ground black pepper

  • ¼ tsp xanthan gum

Realisation
  1. Sprinkle ¼ tsp of salt over the grated cucumber;

  2. Let it sit for 15 minutes to draw out the water;

  3. Drain the cucumber thoroughly;

  4. In a bowl, whisk together the soy yogurt, prepared cucumber, garlic, olive oil, dill, lemon zest, ½ tsp of salt, ground black pepper, and xanthan gum until well combined;

  5. Cover with plastic wrap and chill for 1 hour;

  6. Serve and enjoy!
