Soy Tzatziki


Ingredients ( yields : 250 ml )
120 g cucumber, peeled and grated
¼ tsp (for draining cucumber)
120 g soy yogurt
1 clove of garlic, minced
1 tbsp olive oil
1 tsp dried dill
Zest of 1 lemon
½ tsp salt (for seasoning)
¼ tsp ground black pepper
¼ tsp xanthan gum
Realisation
Sprinkle ¼ tsp of salt over the grated cucumber;
Let it sit for 15 minutes to draw out the water;
Drain the cucumber thoroughly;
In a bowl, whisk together the soy yogurt, prepared cucumber, garlic, olive oil, dill, lemon zest, ½ tsp of salt, ground black pepper, and xanthan gum until well combined;
Cover with plastic wrap and chill for 1 hour;
Serve and enjoy!
