Minty Soy Milk Pudding

Ingredients (yields : 4 servings)
  • 500 ml soy milk

  • 40 g cornstarch

  • 60 ml mint syrup (3:1 sugar-to-water ratio)

Realisation
  1. Dissolve the cornstarch in 250 ml of soy milk;

  2. Add the dissolved cornstarch and the mint syrup to the remaining soy milk;

  3. Bring the mixture to a simmer while stirring continuously, or until it starts to thicken;

  4. Divide the mixture into dessert cups;

  5. Chill in the refrigerator for at least 4 hours;

  6. Serve and enjoy!
