Minty Soy Milk Pudding


Ingredients (yields : 4 servings)
500 ml soy milk
40 g cornstarch
60 ml mint syrup (3:1 sugar-to-water ratio)
Realisation
Dissolve the cornstarch in 250 ml of soy milk;
Add the dissolved cornstarch and the mint syrup to the remaining soy milk;
Bring the mixture to a simmer while stirring continuously, or until it starts to thicken;
Divide the mixture into dessert cups;
Chill in the refrigerator for at least 4 hours;
Serve and enjoy!
