Description
Soy protein flour is obtained by grinding soybeans from which fat has been removed into a powder form. In practice, soybean oil is first extracted from soybeans in the soybean crushing industry. The co-product obtained simultaneously, soybean meal, has its fat removed, resulting in a significantly higher proportion of protein. This soybean meal is then further processed to produce soy protein flour, also known as defatted soy flour. Soy protein flour contains approximately 50% protein.
