Soy Milk Aïoli

Ingredients (yields: 700 ml)
  • 1 cup soy milk

  • 4 cloves garlic, minced

  • 2 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp salt

  • 1½ cups olive oil

Realisation
  1. In a tall container, blend the soy milk, garlic, lemon juice, mustard, and salt with an immersion blender until well combined;

  2. Slowly drizzle in the oil in a thin stream while continuing to blend, until the mixture emulsifies into a creamy consistency;

  3. Refrigerate for at least 1 hour to allow the flavors to develop;

  4. Serve and enjoy!
