Soy Milk Aïoli


Ingredients (yields: 700 ml)
1 cup soy milk
4 cloves garlic, minced
2 tbsp lemon juice
1 tsp Dijon mustard
1 tsp salt
1½ cups olive oil
Realisation
In a tall container, blend the soy milk, garlic, lemon juice, mustard, and salt with an immersion blender until well combined;
Slowly drizzle in the oil in a thin stream while continuing to blend, until the mixture emulsifies into a creamy consistency;
Refrigerate for at least 1 hour to allow the flavors to develop;
Serve and enjoy!
