Soy Hummus

Ingredients (yields: 250 ml)
  • 120 g dry soybeans

  • 60 g tahini

  • 2 tbsp olive oil

  • 3 tbsp lemon juice

  • 1 tbsp maple syrup

  • 2 garlic cloves, minced

  • ½ tsp ground cumin

  • ½ tsp salt

Realisation
  1. Soak the soybeans overnight;

  2. Rinse, then boil for 120 minutes, or until soft;

  3. Drain and let cool to room temperature;

  4. Blend the soybeans, tahini, olive oil, lemon juice, maple syrup, garlic, cumin, and salt in a food processor until smooth;

  5. Sprinkle with sesame seeds;

  6. Serve and enjoy!
