Soy Dal Tadka

Ingredients (yields: 750 ml)
  • 160 g dry soybeans

  • 3 cups water

  • 1 tsp turmeric

  • 1 tsp salt

  • 2 tbsp ghee

  • 1 tsp cumin seeds

  • 60 g onion, finely chopped

  • 4 garlic cloves, minced

  • 60 ml tomato paste

  • ½ tsp red chili powder

  • ½ tsp garam masala

  • 2 tbsp chopped cilantro leaves

Realisation
  1. Soak the soybeans overnight, then rinse and drain;

  2. Blend the soaked soybeans with 3 cups of water until a coarse texture forms;

  3. Transfer the mixture to a pot, add the turmeric and salt, bring to a boil, then reduce the heat and simmer for 20 minutes;

  4. Heat the ghee in a small pan;

  5. Add the cumin seeds and let them sizzle;

  6. Add the chopped onion and sauté until golden, about 6 minutes;

  7. Add the minced garlic and sauté until fragrant, about 1 minute;

  8. Add the tomato paste, red chili powder, and garam masala, and stir until well combined, about 2 minutes;

  9. Pour the sizzling spice mixture over the cooked soybean;

  10. Sprinkle chopped cilantro on top;

  11. Serve and enjoy!
