Soy Dal Tadka


Ingredients (yields: 750 ml)
160 g dry soybeans
3 cups water
1 tsp turmeric
1 tsp salt
2 tbsp ghee
1 tsp cumin seeds
60 g onion, finely chopped
4 garlic cloves, minced
60 ml tomato paste
½ tsp red chili powder
½ tsp garam masala
2 tbsp chopped cilantro leaves
Realisation
Soak the soybeans overnight, then rinse and drain;
Blend the soaked soybeans with 3 cups of water until a coarse texture forms;
Transfer the mixture to a pot, add the turmeric and salt, bring to a boil, then reduce the heat and simmer for 20 minutes;
Heat the ghee in a small pan;
Add the cumin seeds and let them sizzle;
Add the chopped onion and sauté until golden, about 6 minutes;
Add the minced garlic and sauté until fragrant, about 1 minute;
Add the tomato paste, red chili powder, and garam masala, and stir until well combined, about 2 minutes;
Pour the sizzling spice mixture over the cooked soybean;
Sprinkle chopped cilantro on top;
Serve and enjoy!
