Silken Tofu Cake

Ingredients (yields : 8 servings)
  • 180 g all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 300 g silken tofu

  • 150 g granulated sugar

  • 120 ml soy milk

  • 120 ml sunflower oil

  • 2 tsp vanilla powder

  • 2 tbsp lemon juice

Realisation
  1. Preheat the oven to 180ºC;

  2. Grease and flour a 10-inch round cake pan;

  3. Add the silken tofu, sugar, soy milk, sunflower oil, vanilla powder, and lemon juice to a blender, and blend until smooth;

  4. In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt;

  5. Combine the wet and dry ingredients, using a spatula to gently mix them together until just combined;

  6. Pour the batter into the prepared cake pan and bake at 180ºC for 30 minutes, or until a toothpick inserted into the center comes out clean;

  7. Let the cake cool in the pan for a few minutes, then unmold it and transfer it to a wire rack to cool completely before serving straightforward or frosting;

  8. Serve and enjoy!
