Silken Tofu Cake
Ingredients (yields : 8 servings)
180 g all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
300 g silken tofu
150 g granulated sugar
120 ml soy milk
120 ml sunflower oil
2 tsp vanilla powder
2 tbsp lemon juice
Realisation
Preheat the oven to 180ºC;
Grease and flour a 10-inch round cake pan;
Add the silken tofu, sugar, soy milk, sunflower oil, vanilla powder, and lemon juice to a blender, and blend until smooth;
In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt;
Combine the wet and dry ingredients, using a spatula to gently mix them together until just combined;
Pour the batter into the prepared cake pan and bake at 180ºC for 30 minutes, or until a toothpick inserted into the center comes out clean;
Let the cake cool in the pan for a few minutes, then unmold it and transfer it to a wire rack to cool completely before serving straightforward or frosting;
