Savory Soy Yogurt Cake


Ingredients (yields : One 12 × 22 × 5 cm loaf)
125 g soy yogurt
3 eggs
60 ml olive oil
½ tsp + 1 tsp salt
180 g all purpose flour
10 g baking powder
½ tsp ground black pepper
1 tbsp Herbes de Provence
300 g zucchini, grated
3 tbsp nutritional yeast
Realisation
In a bowl, mix the yogurt and eggs until well combined;
Add the oil and ½ tsp of salt, then mix until incorporated;
Sift together the flour, baking powder, 1 tsp of salt and black pepper;
Add the flour mixture to the yogurt mixture, and stir until just combined;
Fold in the grated zucchini and nutritional yeast until evenly distributed;
Pour the batter into a greased loaf tin;
Bake in a 180ºC oven for about 45 minutes, or until a skewer inserted into the center comes out clean;
Remove from the oven and let it cool slightly before unmolding;
Transfer the loaf to a wire rack to cool completely;
Serve warm or at room temperature and enjoy!
