Savory Soy Yogurt Cake

Ingredients (yields : One 12 × 22 × 5 cm loaf)
  • 125 g soy yogurt

  • 3 eggs

  • 60 ml olive oil

  • ½ tsp + 1 tsp salt

  • 180 g all purpose flour

  • 10 g baking powder

  • ½ tsp ground black pepper

  • 1 tbsp Herbes de Provence

  • 300 g zucchini, grated

  • 3 tbsp nutritional yeast

Realisation
  1. In a bowl, mix the yogurt and eggs until well combined;

  2. Add the oil and ½ tsp of salt, then mix until incorporated;

  3. Sift together the flour, baking powder, 1 tsp of salt and black pepper;

  4. Add the flour mixture to the yogurt mixture, and stir until just combined;

  5. Fold in the grated zucchini and nutritional yeast until evenly distributed;

  6. Pour the batter into a greased loaf tin;

  7. Bake in a 180ºC oven for about 45 minutes, or until a skewer inserted into the center comes out clean;

  8. Remove from the oven and let it cool slightly before unmolding;

  9. Transfer the loaf to a wire rack to cool completely;

  10. Serve warm or at room temperature and enjoy!
