Rindsgulasch with Tofu
Ingredients (yields : 8 servings)
2000 g stew beef
500 g firm tofu
2 tbsp vegetable oil
2 onions
4 cloves of garlic
2 tbsp sweet paprika
2 tsp caraway seeds
2 tsp marjoram
1 tbsp tomato paste
3 bay leaves
2000 ml broth (or more as needed)
Salt and pepper, to taste
Realisation
Cut the beef into 5 cm pieces;
Cut the tofu into 2 cm cubes;
Peel and slice the onions;
Peel and mince the garlic;
Heat the oil in a large Dutch oven and brown the beef on all sides;
Remove the browned beef from the pot and set aside;
In the same pot, add the onions and cook until caramelized, about 10 minutes;
Add the garlic and cook until fragrant, about 1 minute;
Return the beef back into the pot, then add the sweet paprika, caraway seeds, marjoram, tomato paste, bay leaves, and enough broth to cover all ingredients;
Bring to a boil, then reduce the heat to a simmer and cook for 3 hours, checking every hour;
Taste and season with salt and pepper to your preference;
Serve and enjoy!
