Rindsgulasch with Tofu

Ingredients (yields : 8 servings)
  • 2000 g stew beef

  • 500 g firm tofu

  • 2 tbsp vegetable oil

  • 2 onions

  • 4 cloves of garlic

  • 2 tbsp sweet paprika

  • 2 tsp caraway seeds

  • 2 tsp marjoram

  • 1 tbsp tomato paste

  • 3 bay leaves

  • 2000 ml broth (or more as needed)

  • Salt and pepper, to taste

Realisation
  1. Cut the beef into 5 cm pieces;

  2. Cut the tofu into 2 cm cubes;

  3. Peel and slice the onions;

  4. Peel and mince the garlic;

  5. Heat the oil in a large Dutch oven and brown the beef on all sides;

  6. Remove the browned beef from the pot and set aside;

  7. In the same pot, add the onions and cook until caramelized, about 10 minutes;

  8. Add the garlic and cook until fragrant, about 1 minute;

  9. Return the beef back into the pot, then add the sweet paprika, caraway seeds, marjoram, tomato paste, bay leaves, and enough broth to cover all ingredients;

  10. Bring to a boil, then reduce the heat to a simmer and cook for 3 hours, checking every hour;

  11. Taste and season with salt and pepper to your preference;

  12. Serve and enjoy!
