Lacquered Tofu Loaf

Ingredients (yields: 8 servings)
  • 300 g firm tofu

  • 300 g cooked lentils

  • 120 g onions, finely chopped

  • 3 cloves garlic, minced

  • 10 g fresh parsley, finely chopped

  • ¾ tsp herbes de Provence

  • ¾ tsp salt

  • ½ tsp ground white pepper

  • ½ tsp ground black pepper

  • ¾ tsp paprika

  • 25 ml soy sauce

  • 30 g hoisin sauce

  • 3 eggs, beaten

  • 100 ml ketchup

  • 20 ml mustard

  • 50 g brown sugar

Realisation
  1. Line a 25 × 10 cm loaf pan with parchment paper;

  2. Mash the tofu and lentils together until combined;

  3. Add the onion, garlic, and parsley, and mix until incorporated;

  4. Add the herbes de Provence, salt, white pepper, black pepper, and paprika, then mix until evenly distributed;

  5. Add the soy sauce and hoisin sauce, and mix until combined;

  6. Add the beaten eggs and mix until fully incorporated;

  7. Pack the mixture into the prepared loaf pan;

  8. In a bowl, prepare a glaze by mixing the ketchup, mustard, and brown sugar until well combined;

  9. Spread the glaze evenly over the tofu loaf;

  10. Bake in a 180°C oven for 35–40 minutes, or until the glaze is set and a skewer inserted into the center comes out clean;

  11. Let it rest at room temperature for 15 minutes before removing from the pan;

  12. Serve and enjoy!
