Lacquered Tofu Loaf


Ingredients (yields: 8 servings)
300 g firm tofu
300 g cooked lentils
120 g onions, finely chopped
3 cloves garlic, minced
10 g fresh parsley, finely chopped
¾ tsp herbes de Provence
¾ tsp salt
½ tsp ground white pepper
½ tsp ground black pepper
¾ tsp paprika
25 ml soy sauce
30 g hoisin sauce
3 eggs, beaten
100 ml ketchup
20 ml mustard
50 g brown sugar
Realisation
Line a 25 × 10 cm loaf pan with parchment paper;
Mash the tofu and lentils together until combined;
Add the onion, garlic, and parsley, and mix until incorporated;
Add the herbes de Provence, salt, white pepper, black pepper, and paprika, then mix until evenly distributed;
Add the soy sauce and hoisin sauce, and mix until combined;
Add the beaten eggs and mix until fully incorporated;
Pack the mixture into the prepared loaf pan;
In a bowl, prepare a glaze by mixing the ketchup, mustard, and brown sugar until well combined;
Spread the glaze evenly over the tofu loaf;
Bake in a 180°C oven for 35–40 minutes, or until the glaze is set and a skewer inserted into the center comes out clean;
Let it rest at room temperature for 15 minutes before removing from the pan;
