How to reduce soybean cooking time?
Due to their tough seed coat, even after overnight soaking, soybeans still require about three hours of simmering to become fully tender. However, blending soaked soybeans before cooking can significantly reduce the cooking time because it physically breaks down the beans’ outer layer, allowing heat to penetrate much more quickly. This method is suitable for recipes requiring a mushy or creamy texture, but not for those where the beans need to remain whole.
