How to prepare textured soy protein?
Textured soy protein needs to be rehydrated before being used as a meat substitute in recipes. The rehydration method varies slightly depending on the form of the textured soy protein:
Granules: Soak in boiling water off the heat, with a lid, for about 15 minutes.
Chunks: Simmer gently for about 15 minutes.
Cutlets: Simmer gently for 20–25 minutes.
After rehydration, drain well and press out any excess water. Then it is ready to use.
