Himmel und Erde with Tofu

Ingredients (yields : 2 servings)
  • 200 g firm tofu

  • 2 tbsp soy sauce

  • 30 g powdered sugar

  • 2 tbsp Chinese yellow wine

  • 1 tsp ground cardamon

  • 500 g potatoes

  • A pinch of nutmeg

  • 500 g apples

  • 1 tbsp white sugar

  • 2 tsp ground cinnamon

  • 1 onion

  • 60 g butter

  • water

  • salt and pepper

Realisation
  1. Slice the tofu into 1 cm thick pieces;

  2. Mix the soy sauce, powdered sugar, Chinese yellow wine and ground cardamon in a bowl to make the marinade;

  3. Marinate the tofu overnight;

  4. Peel the potatoes and cut them into even chunks;

  5. Boil the potatoes in salted water until tender, about 20 minutes;

  6. Drain the water, then mash the potatoes with 30 g of butter, salt, pepper, and a pinch of nutmeg;

  7. Set aside and keep warm;

  8. Peel, core, and cut the apples into small pieces;

  9. In a pan, melt 15 g of butter over medium heat, then add the apples, 1 tablespoon of white sugar, the ground cinnamon;

  10. Cook the apples until they soften and break down into a chunky sauce consistency, about 15 minutes;

  11. Set aside and keep warm;

  12. Peel and slice the onion;

  13. In a pan, melt 15 g of butter over medium heat, then add the onions and sauté until caramelized, about 10 minutes;

  14. Move the onions to the side of the pan, then add the marinated tofu and sear each side until browned;

  15. Add the marinade to the pan and cook until the sauce reduces;

  16. Plate the mashed potatoes and apple sauce side by side;

  17. Add the caramelized onions and seared tofu on top;

  18. Serve and enjoy!
