Himmel und Erde with Tofu
Ingredients (yields : 2 servings)
200 g firm tofu
2 tbsp soy sauce
30 g powdered sugar
2 tbsp Chinese yellow wine
1 tsp ground cardamon
500 g potatoes
A pinch of nutmeg
500 g apples
1 tbsp white sugar
2 tsp ground cinnamon
1 onion
60 g butter
water
salt and pepper
Realisation
Slice the tofu into 1 cm thick pieces;
Mix the soy sauce, powdered sugar, Chinese yellow wine and ground cardamon in a bowl to make the marinade;
Marinate the tofu overnight;
Peel the potatoes and cut them into even chunks;
Boil the potatoes in salted water until tender, about 20 minutes;
Drain the water, then mash the potatoes with 30 g of butter, salt, pepper, and a pinch of nutmeg;
Set aside and keep warm;
Peel, core, and cut the apples into small pieces;
In a pan, melt 15 g of butter over medium heat, then add the apples, 1 tablespoon of white sugar, the ground cinnamon;
Cook the apples until they soften and break down into a chunky sauce consistency, about 15 minutes;
Set aside and keep warm;
Peel and slice the onion;
In a pan, melt 15 g of butter over medium heat, then add the onions and sauté until caramelized, about 10 minutes;
Move the onions to the side of the pan, then add the marinated tofu and sear each side until browned;
Add the marinade to the pan and cook until the sauce reduces;
Plate the mashed potatoes and apple sauce side by side;
Add the caramelized onions and seared tofu on top;
Serve and enjoy!
