Description
The Gao'an dried tofu skin has a light yellow tint with a slight shine. Its interior is hollow, similar to rigatoni. It is known for its ability to withstand prolonged cooking without becoming mushy.
Technical Aspects
Two factors contribute to the high quality of Gao’an dried tofu skin. Firstly, soybeans from Gao’an have a higher protein content than standard soybeans. Secondly, the local water is soft, and soy milk made with soft water has a higher protein content. The higher the protein content, the more easily the tofu skin forms.
