Crustless Quiche with Tofu


Ingredients (yields : 4 servings)
- 300 g mushrooms 
- 30 g butter 
- 100 g smoked fish 
- 300 g silken tofu 
- 3 eggs 
- 1/4 tsp salt 
- 1tsp herbes de Provence 
- 50 g grated mozzarella 
- 50 g grated Parmesan 
Realisation
- Slice the mushrooms; 
- Melt the butter in a skillet, then sauté the mushrooms until softened; 
- Shred the smoked fish; 
- Place the tofu and eggs in a mixing bowl, season with the salt and herbes de Provence, then mix well; 
- Add the grated mozzarella and Parmesan, then mix well; 
- Add the sautéed mushrooms and shredded fish, then mix well; 
- Place the mixture into a round baking pan with a diameter of 25 cm; 
- Bake in the oven at 190°C for 20~25 minutes or until the top turns golden; 
- Remove it from the oven and let cool for 10 minutes; 
- Serve and enjoy!
