Breton Galette with Tofu
Ingredients (yields : 2 servings)
200 g firm tofu
15 ml light soy sauce
15 ml hoisin sauce
3 eggs
50 g buckwheat flour
Pinch of salt
10 g butter
2 premade buckwheat galettes
1/4 cup grated emmental cheese
Realisation
Grate the tofu;
Add the light soy sauce and hoisin sauce, then mix well;
Add 1 egg and mix well;
Mix the flour and salt together;
Add the flour mixture to the tofu mixture, then mix to form a dough;
Divide the dough into 2 and shape each part into a round patty with a 15 cm diameter;
Bake the tofu patties in a 180ºC oven for 10 minutes, then set aside;
Melt half of the butter in a skillet;
Add 1 piece of buckwheat galette to the skillet;
Place 1 piece of baked tofu patty in the center of the galette;
Spread 2 tbsp of cheese over the tofu patty;
Crack 1 egg and add it on top of the cheese, then poke open the yolk gently;
Fold the 4 sides of the galette up to form a square shape;
Half cover the skillet with a lid, then cook the galette until the egg white turns opaque;
Repeat steps 8-14 for the second galette;
