Breton Galette with Tofu

Ingredients (yields : 2 servings)
Realisation
  1. Grate the tofu;

  2. Add the light soy sauce and hoisin sauce, then mix well;

  3. Add 1 egg and mix well;

  4. Mix the flour and salt together;

  5. Add the flour mixture to the tofu mixture, then mix to form a dough;

  6. Divide the dough into 2 and shape each part into a round patty with a 15 cm diameter;

  7. Bake the tofu patties in a 180ºC oven for 10 minutes, then set aside;

  8. Melt half of the butter in a skillet;

  9. Add 1 piece of buckwheat galette to the skillet;

  10. Place 1 piece of baked tofu patty in the center of the galette;

  11. Spread 2 tbsp of cheese over the tofu patty;

  12. Crack 1 egg and add it on top of the cheese, then poke open the yolk gently;

  13. Fold the 4 sides of the galette up to form a square shape;

  14. Half cover the skillet with a lid, then cook the galette until the egg white turns opaque;

  15. Repeat steps 8-14 for the second galette;

  16. Serve and bon appétit !
