Beef and Tofu Quick Stew

Ingredients (yields : 2 servings)
  • 200 g firm tofu (or frozen tofu)

  • 1 onion

  • 2 tbsp vegetable oil

  • 200 g filet mignon

  • 2 stems of celery

  • 8 shiitake mushrooms

  • 750 ml broth

  • 1 tbsp soy sauce

  • salt and pepper

Realisation
  1. Cut the tofu into cubes;

  2. Season the filet mignon with salt and pepper;

  3. Peel and slice the onion;

  4. Separate the leaves from the celery stems and set them aside;

  5. Cut the celery stems into 10 cm-long pieces;

  6. Heat the olive oil in a skillet and sear the filet mignon on both sides for about 2 minutes per side;

  7. Remove the filet mignon from the skillet and slice it into 3 mm- thick pieces;

  8. Add the sliced onion to the skillet and cook until softened, about 8 minutes ;

  9. Add the broth, soy sauce, celery stems, mushrooms, and tofu, then bring to a boil;

  10. Reduce the heat, cover with a lid, and simmer for 20 minutes;

  11. Taste and add salt according to your preference;

  12. Add the filet mignon slices and cook for 1 minute;

  13. Turn off the heat and add the celery leaves;

  14. Serve and enjoy!
