Beef and Tofu Quick Stew
Ingredients (yields : 2 servings)
200 g firm tofu (or frozen tofu)
1 onion
2 tbsp vegetable oil
200 g filet mignon
2 stems of celery
8 shiitake mushrooms
750 ml broth
1 tbsp soy sauce
salt and pepper
Realisation
Cut the tofu into cubes;
Season the filet mignon with salt and pepper;
Peel and slice the onion;
Separate the leaves from the celery stems and set them aside;
Cut the celery stems into 10 cm-long pieces;
Heat the olive oil in a skillet and sear the filet mignon on both sides for about 2 minutes per side;
Remove the filet mignon from the skillet and slice it into 3 mm- thick pieces;
Add the sliced onion to the skillet and cook until softened, about 8 minutes ;
Add the broth, soy sauce, celery stems, mushrooms, and tofu, then bring to a boil;
Reduce the heat, cover with a lid, and simmer for 20 minutes;
Taste and add salt according to your preference;
Add the filet mignon slices and cook for 1 minute;
Turn off the heat and add the celery leaves;
Serve and enjoy!
