Tofu Tian
Ingredients (yields : 4 servings)
250 g firm tofu
2 cups yellow curry sauce
1 tbsp of olive oil + drizzle
1 onion
2 cloves garlic
1 tsp dried thyme
1 tsp dried oregano
400 g crushed tomatoes
Salt and pepper
1 eggplant
1 zucchini
3 tomatoes
1 red sweet pepper
3 sprigs of chives (optional)
Edible flowers (optional)
Realisation
The night before cooking, slice the tofu into 8mm thick slices and marinate it with the yellow curry sauce;
On the day of cooking, mince the onion and garlic;
In a saucepan, heat the olive oil;
Add the onion and cook until it turns transparent;
Add the garlic and cook until it releases its fragrance;
Add the dried thyme and oregano and cook for 30 seconds;
Add the crushed tomatoes and a smidgen of salt, bring to a boil;
Reduce the heat and simmer the sauce for 20 minutes;
Preheat the oven to 180ºC;
Cut the eggplant, zucchini, tomatoes, and sweet pepper into 8mm thick rondelles;
Pour the tomato sauce into a baking dish and arrange the slices of tofu and vegetables alternately in the dish;
Add a drizzle of olive oil on top and sprinkle the salt and pepper;
Bake in the oven for 40 minutes;
Mince the chives;
Garnish the tian with minced chives and flowers;
Serve and enjoy!
