Tofu Tian

Ingredients yields : 4 servings)
  • 250 g firm tofu

  • 2 cups yellow curry sauce

  • 1 tbsp of olive oil + drizzle

  • 1 onion

  • 2 cloves garlic

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 400 g crushed tomatoes

  • Salt and pepper

  • 1 eggplant

  • 1 zucchini

  • 3 tomatoes

  • 1 red sweet pepper

  • 3 sprigs of chives (optional)

  • Edible flowers (optional)

Realisation
  1. The night before cooking, slice the tofu into 8mm thick slices and marinate it with the yellow curry sauce;

  2. On the day of cooking, mince the onion and garlic;

  3. In a saucepan, heat the olive oil;

  4. Add the onion and cook until it turns transparent;

  5. Add the garlic and cook until it releases its fragrance;

  6. Add the dried thyme and oregano and cook for 30 seconds;

  7. Add the crushed tomatoes and a smidgen of salt, bring to a boil;

  8. Reduce the heat and simmer the sauce for 20 minutes;

  9. Preheat the oven to 180ºC;

  10. Cut the eggplant, zucchini, tomatoes, and sweet pepper into 8mm thick rondelles;

  11. Pour the tomato sauce into a baking dish and arrange the slices of tofu and vegetables alternately in the dish;

  12. Add a drizzle of olive oil on top and sprinkle the salt and pepper;

  13. Bake in the oven for 40 minutes;

  14. Mince the chives;

  15. Garnish the tian with minced chives and flowers;

  16. Serve and enjoy!
