Tofu Bruschetta
Ingredients (yields : 30 pieces)
200 g firm tofu
1 cup olive oil
1 bulb garlic
1 cup fresh basil leaves + more (for decoration)
1 tsp salt
1 demi-baguette
3 tomatoes
Realisation
Dice the tofu;
Place the olive oil, garlic, basil leaves, and salt in a mixer, then blend until well combined;
Marinate the tofu with the oil-garlic mixture for 30 minutes;
Cut the baguette into 1 cm slices;
Dice the tomatoes;
Remove the tofu from the oil-garlic mixture;
Brush the oil-garlic mixture on each slice of the baguette;
Spread the slices on the baking sheet in one layer;
Bake in the over at 180ºC for 5 minutes or until crispy;
Put 2 tsp diced tomatoes and 1 tsp diced tofu on top of each slice;
Place one basil leave on top of each slice;
Drizzle each slice with the oil-garlic mixture;
Serve immediately and enjoy!
