Tofu Azuki Verrine
Ingredients (yields : 4 servings)
120 g silken tofu
120 g dried azuki beans
water
pinch of salt
60 g sugar
1L black tea
60 ml honey
whipped cream
Realisation
Rinse the beans in water and soak them for at least 8 hours;
Drain the beans and discard the soaking water;
Bring the beans, pinch of salt and 50 cl of water to a boil;
Reduce the heat, cover, and simmer until the beans are soft enough to be easily crushed between fingers, about 1 hour;
Strain the beans, add the sugar, mash them together until well combined (if the mixture becomes too dry, add some of the bean cooking water);
Mix the black tea and the honey well;
Into each verrine glass, first layer approximately 60 ml the bean paste, followed by 30 g of tofu, then add 250 ml of honey-tea;
Chill the verrines in the fridge;
When serving, top them with a layer of whipped cream.
