Tofu Azuki Verrine

Ingredients yields : 4 servings)
  • 120 g silken tofu

  • 120 g dried azuki beans

  • water

  • pinch of salt

  • 60 g sugar

  • 1L black tea

  • 60 ml honey

  • whipped cream

Realisation
  1. Rinse the beans in water and soak them for at least 8 hours;

  2. Drain the beans and discard the soaking water;

  3. Bring the beans, pinch of salt and 50 cl of water to a boil;

  4. Reduce the heat, cover, and simmer until the beans are soft enough to be easily crushed between fingers, about 1 hour;

  5. Strain the beans, add the sugar, mash them together until well combined (if the mixture becomes too dry, add some of the bean cooking water);

  6. Mix the black tea and the honey well;

  7. Into each verrine glass, first layer approximately 60 ml the bean paste, followed by 30 g of tofu, then add 250 ml of honey-tea;

  8. Chill the verrines in the fridge;

  9. When serving, top them with a layer of whipped cream.

  10. Serve and enjoy!
