Description

Tangtang yellow tofu is a variety that falls between pressed tofu and soft tofu, combining the advantages of both. Each block of tofu measures 10 cm on each side, with a glossy yellow outer layer, a firm texture that is not easily broken; the interior is soft, tender, and elastic, displaying irregular silk-like patterns. The product itself already has a salty and distinct tumeric taste.

Technical Aspects

After the initial moulding of tofu is completed, it still needs to be seasoned with salt and undergo a process known as ‘three boils and three hangings.’ ‘Boil’ refers to placing the tofu in hot water seasoned with turmeric powder and boiling for 5 minutes. ‘Hang’ refers to suspending the boiled tofu to air-dry. One boiling and one hanging constitute one round, and the entire process is considered complete after three boils and three hangings.
