Stuffed Peppers with Tofu
Ingredients (yields : 16 servings)
1/4 cup olive oil
1 cup chopped onion
1 tbsp paprika
1 tbsp herbes de Provence
4 cups chopped mushroom
4 cups grated firm tofu
1/2 cup soy sauce
1 cup grated mozzarella
1 cup grated Parmesan
8 bell peppers
Realisation
Heat the olive oil in a skillet over medium-high heat;
Add the chopped onion and cook until translucent;
Add the paprika and herbes de Provence, and stir until combined;
Add the chopped mushrooms and grated tofu, and cook until mushrooms have softened;
Add the soy sauce and stir until combined;
Remove from the heat and add the grated mozzarella and Parmesan and stir until combined;
Halve the bell peppers and remove the seeds;
Scoop the mixture into the halved bell peppers;
Bake in the oven at 180ºC for 15~20 minutes, or until golden brown;
Serve and enjoy!
