Stuffed Peppers with Tofu

Ingredients yields : 16 servings)
  • 1/4 cup olive oil

  • 1 cup chopped onion

  • 1 tbsp paprika

  • 1 tbsp herbes de Provence

  • 4 cups chopped mushroom

  • 4 cups grated firm tofu

  • 1/2 cup soy sauce

  • 1 cup grated mozzarella

  • 1 cup grated Parmesan

  • 8 bell peppers

Realisation
  1. Heat the olive oil in a skillet over medium-high heat;

  2. Add the chopped onion and cook until translucent;

  3. Add the paprika and herbes de Provence, and stir until combined;

  4. Add the chopped mushrooms and grated tofu, and cook until mushrooms have softened;

  5. Add the soy sauce and stir until combined;

  6. Remove from the heat and add the grated mozzarella and Parmesan and stir until combined;

  7. Halve the bell peppers and remove the seeds;

  8. Scoop the mixture into the halved bell peppers;

  9. Bake in the oven at 180ºC for 15~20 minutes, or until golden brown;

  10. Serve and enjoy!
