Pickled Tofu

Ingredients yields : 8 servings)
  • 250 g frozen tofu

  • 180 ml water

  • 180 ml vinegar

  • 40 g sugar

  • 20 g sea salt

  • 10 g mustard seeds

  • 1 pear

Realisation
  1. Cut the thawed frozen tofu into cubes;

  2. Slice the pear;

  3. Blanch the tofu in boiling water for 2 minutes, then drain and set it aside;

  4. Mix the water, vinegar, sugar, salt, mustard seeds, and pear, then bring the mixture to a boil;

  5. Reduce the heat and let it simmer for 15 minutes;

  6. Soak the tofu in the pickling brine and store it in the refrigerator for 4 to 8 hours;

  7. Remove the tofu from the brine;

  8. Serve, and enjoy!
