Pickled Tofu
Ingredients (yields : 8 servings)
250 g frozen tofu
180 ml water
180 ml vinegar
40 g sugar
20 g sea salt
10 g mustard seeds
1 pear
Realisation
Cut the thawed frozen tofu into cubes;
Slice the pear;
Blanch the tofu in boiling water for 2 minutes, then drain and set it aside;
Mix the water, vinegar, sugar, salt, mustard seeds, and pear, then bring the mixture to a boil;
Reduce the heat and let it simmer for 15 minutes;
Soak the tofu in the pickling brine and store it in the refrigerator for 4 to 8 hours;
Remove the tofu from the brine;
Serve, and enjoy!
