Lukewarm Tossed Tofu Skin Gao’an Style

Ingredients yields : 8 servings)
  • 2 sticks of Gao'an dried tofu skin

  • 2000 ml water and more for soaking

  • 10 g of salt

  • 2 cloves of garlic

  • 1 bunch of chives

  • 30 ml vegetable oil

  • 30 ml Chinese mature vinegar

  • 10 g chili powder

Realisation
  1. Soak the dried tofu skin in water until soft, about 4 hours;

  2. Cut the rehydrated tofu skin into segments, each about 5 cm long;

  3. Boil 2000 ml of water, then add 10 g of salt;

  4. Blanch the rehydrated tofu skin in boiling salted water for 5 minutes;

  5. Drain the tofu skin from the boiling water and rinse it with warm water at around 40ºC;

  6. Set aside the tofu skin to drain;

  7. Mince garlic and chives;

  8. Heat oil in a pan, sauté the minced garlic until golden brown, about 1 minute, then turn off the heat;

  9. Add the tofu skin, minced chives, vinegar, and chili powder to the pan, toss well;

  10. Serve and enjoy!
