Lukewarm Tossed Tofu Skin Gao’an Style
Ingredients (yields : 8 servings)
2 sticks of Gao'an dried tofu skin
2000 ml water and more for soaking
10 g of salt
2 cloves of garlic
1 bunch of chives
30 ml vegetable oil
30 ml Chinese mature vinegar
10 g chili powder
Realisation
Soak the dried tofu skin in water until soft, about 4 hours;
Cut the rehydrated tofu skin into segments, each about 5 cm long;
Boil 2000 ml of water, then add 10 g of salt;
Blanch the rehydrated tofu skin in boiling salted water for 5 minutes;
Drain the tofu skin from the boiling water and rinse it with warm water at around 40ºC;
Set aside the tofu skin to drain;
Mince garlic and chives;
Heat oil in a pan, sauté the minced garlic until golden brown, about 1 minute, then turn off the heat;
Add the tofu skin, minced chives, vinegar, and chili powder to the pan, toss well;
Serve and enjoy!
