Circassian Tofu
Ingredients (yields : 10 servings)
500 g firm tofu
4 shallots
4 cloves garlic
250 g stale bread
400 g + 100 g walnuts
250 ml tahini
1 tsp ground cumin
1 tsp ground coriander
1 tsp + 1 tsp paprika
750 ml water
30 ml olive oil
salt and pepper to taste
60 ml chopped parsley
30 pearl onions
Realisation
Mash the tofu;
Mince the shallots and garlic;
Remove the crust from the bread;
In a blender, combine 400 g of walnuts, tahini, crustless bread, ground cumin, ground coriander, 1 tsp of paprika and water, then blend until smooth;
Toast 100 g of walnuts in a skillet then coarsely chop them;
Heat the olive oil in a skillet and brown the shallots;
Add the garlic and cook until fragrant;
Add the mashed tofu and stir-fry until lightly browned;
Add the walnut sauce;
Bring the tofu and sauce mixture to a boil, then simmer for 5 minutes;
Add salt and pepper to taste;
Serve with crispy flatbread, garnish with chopped parsley, paprika, pearl onions, and toasted chopped walnuts and enjoy!
