Breaded Tofu
Ingredients (yields : 4 servings)
250 g semi-firm tofu
flour
2 eggs
bread crumbs
salt
pepper
oil for frying*
*The frying oil should have a high smoke point (180ºC is a good reference baseline), while the flavor of the oil (neutral or not) is a matter of personal preference.
Realisation
Cut the tofu into 3 cm cubes;
Prepare three deep plates: in the first, pour the flour; in the second, beat the eggs; in the third, mix together the breadcrumbs, salt and pepper;
Coat the tofu cubes with flour, dip them in the beaten egg, and then coat them with the breadcrumb mixture;
Heat the oil to 180ºC in a deep fryer or a high, narrow pot;
Fry the cubes until golden brown;
Serve with the desired sauce, such as a dip made from fermented tofu. Enjoy!
