Bacon Shiitake Tofu Soup
Ingredients (yields : 2 servings)
200 g Baishuiyang tofu
2 slices of bacon
5 shiitake mushrooms
2 scallions
50 cl broth
salt
Realisation
Cube the tofu;
Cut the bacon into segments;
Mince the scallions;
Scald the tofu in boiling water for 1 minute, then remove and drain;
Heat a pan, add the bacon, slowly fry until oil is released, then remove the bacon from the pan;
Add the scallions, stir-fry for 30 seconds;
Add the shiitake mushrooms, stir-fry for 1 minute;
Add the broth and tofu, bring to a boil;
Reduce heat, cover, and simmer for 10 minutes;
Taste, and if needed, add salt according to your taste, then turn off the heat;
Serve and enjoy!
