Bacon Shiitake Tofu Soup

Ingredients yields : 2 servings)
  • 200 g Baishuiyang tofu

  • 2 slices of bacon

  • 5 shiitake mushrooms

  • 2 scallions

  • 50 cl broth

  • salt

Realisation
  1. Cube the tofu;

  2. Cut the bacon into segments;

  3. Mince the scallions;

  4. Scald the tofu in boiling water for 1 minute, then remove and drain;

  5. Heat a pan, add the bacon, slowly fry until oil is released, then remove the bacon from the pan;

  6. Add the scallions, stir-fry for 30 seconds;

  7. Add the shiitake mushrooms, stir-fry for 1 minute;

  8. Add the broth and tofu, bring to a boil;

  9. Reduce heat, cover, and simmer for 10 minutes;

  10. Taste, and if needed, add salt according to your taste, then turn off the heat;

  11. Serve and enjoy!
